- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 teaspoons Thai red curry paste
- 1 pound boneless, skinless chicken thighs, cut into 2-inch pieces
- 1 can (14.5 ounces) coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 2 cups uncooked jasmine rice
- 2 cups chicken broth
- 1/2 cup frozen peas
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges

- Preheat oven to 375°F. Heat oil in a large oven-proof skillet over medium heat. Add onion, garlic and ginger; cook, stirring occasionally, until onion is softened, about 5 minutes.
- Add curry paste and chicken; stir to coat. Cook for about 3 minutes.
- Add coconut milk, fish sauce, brown sugar and turmeric; bring to a boil. Reduce heat to low and simmer for about 5 minutes.
- Add rice and chicken broth; stir to combine. Bring to a boil. Reduce heat to low; cover and simmer for 10 minutes.
- Remove from heat. Stir in peas and cilantro. Place skillet in oven and bake for 20 minutes.
