Welcome everyone to my virtual cooking class! Today, I'm going to show you how to make a classic and delicious Mature Christmas Cake. This recipe is perfect for the holidays, so let's get started! ## Ingredients - 2 cups all-purpose flour - 2 teaspoons baking powder - 1/2 teaspoon salt - 2 teaspoons ground cinnamon - 1 teaspoon ground nutmeg - 1/2 teaspoon ground cloves - 1/2 teaspoon ground allspice - 1/2 cup softened butter - 1 1/2 cups packed dark brown sugar - 4 large eggs - 1 teaspoon vanilla extract - 1/2 cup whole milk - 2 cups dried fruit, such as raisins, currants, cherries and cranberries - 1/2 cup chopped mixed nuts - 1/4 cup brandy - 2 tablespoons apricot jam ## Instructions ### Step 1: Preheat the oven to 350°F (177°C). Grease and flour a 9-inch (23-cm) round cake pan. ### Step 2: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, cloves, and allspice. Set aside. ### Step 3: In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. ### Step 4: Alternately add the flour mixture and the milk to the butter mixture, beginning and ending with the flour mixture. Beat the mixture on low speed until just combined. ### Step 5: Stir in the dried fruit, nuts, and brandy. Pour the batter into the prepared pan. ### Step 6: Bake in the preheated oven for 1 hour and 15 minutes, or until a toothpick inserted into the center of the cake comes out clean. ### Step 7: Remove the cake from the oven and brush the top with the apricot jam. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Enjoy!
