Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 1/4 cup white sugar
  • 3 egg yolks
  • 14 ounces sweetened condensed milk
  • 2/3 cup key lime juice
  • 1/2 teaspoon lime zest
  • 1 cup heavy cream
  • 3 tablespoons white sugar

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture into the bottom and sides of a 9 inch pie plate.
  3. Bake in preheated oven for 10 minutes. Allow to cool.
  4. In a medium bowl, whisk together egg yolks and condensed milk until smooth. Stir in lime juice and lime zest until blended. Pour filling into cooled crust.
  5. Bake in preheated oven for 15 minutes. Allow to cool to room temperature.
  6. In a medium bowl, whip cream until soft peaks form. Add 3 tablespoons of sugar and continue to whip until stiff peaks form. Spread whipped cream over cooled pie.
  7. Refrigerate for at least 2 hours before serving.
