It has all the flavors of a traditional beef stew, but is made much faster in the Instant Pot. In this recipe, I'll show you how to make the most delicious beef stew that's sure to please the whole family. Let's get started! ##Ingredients -2 lbs beef chuck roast, cut into 1-inch cubes -1 tablespoon vegetable oil -2 cloves garlic, minced -1 onion, diced -2 carrots, peeled and diced -2 stalks celery, diced -2 tablespoons tomato paste -2 tablespoons Worcestershire sauce -1/2 cup beef broth -2 bay leaves -2 teaspoons dried thyme -1 teaspoon dried rosemary -1 teaspoon dried oregano -1 teaspoon paprika -1 teaspoon garlic powder -1/2 teaspoon black pepper -1/4 teaspoon salt -3 large potatoes, peeled and cut into 1-inch cubes -3 cups baby carrots ##Instructions ###Step 1: Prepare the Ingredients Cut the beef chuck roast into 1-inch cubes and prepare the vegetables as directed above. ###Step 2: Brown the Beef Add the vegetable oil to the Instant Pot and select the “Sauté” setting. Once the oil is hot, add the beef cubes and sauté for 3-4 minutes, or until lightly browned. ###Step 3: Add the Vegetables Add the garlic, onion, carrots, and celery to the Instant Pot and sauté for an additional 2-3 minutes, or until the vegetables are softened. ###Step 4: Add the Seasonings and Liquid Add the tomato paste, Worcestershire sauce, beef broth, bay leaves, thyme, rosemary, oregano, paprika, garlic powder, black pepper, and salt to the Instant Pot. Stir to combine. ###Step 5: Cook the Stew Add the potatoes and baby carrots to the Instant Pot. Secure the lid, making sure the vent is closed. Select the “Manual” setting and set the timer for 20 minutes. When the cooking time is complete, quick release the pressure. ###Step 6: Serve Carefully remove the lid and stir the stew.
